Smoked Scottish
Salmon
Only the finest fresh Scottish Salmon are selected to produce our
Craigellachie, Grants Traditional and our new premium range of Scottish
Monarch. Time honoured smoking methods perfected through generations
provide a consistently subtle texture and delicate flavour. Dry cured
with natural salt and gently smoked over smouldering oak-wood chips.

Gravadlax Salmon
Using time-honoured Nordic techniques perfected over generations, we
cure our trimmed fresh fillets of North Atlantic Salmon using a delicate
blend of dill, salt and sugar. The steeped fillets are allowed to cure
and mature for 4 days to develop the flavour. Once cured the fillets are
topped with a Scandinavian herb coating of dill, peppers, and lemon oil
and sliced into a traditional D shape.
